Hunting skill notification

If you right click some small animal, like squirrel, without the hunting skill, you should get message about hunting not being learnt yet.

This seems like one of those things that really don't need any handholding.

If a new player goes out and try to catch a small animal, but can't, the most logical thing for them to do is check if they have any available skills to unlock, maybe something called "Hunting" ?

Not according to most newbies I've introduced to the game. It's always a couple minutes of me hmmmmm-ing then remembering hunting.

would be way easier to add a few extra quests to the tutorial

Every new skill e.g. Hunting, Boatbuilding should come with a questline that acts as a tutorial.

(The Murder questline will be fun)

exactly what I was thinking, it would be as simple as

"buy the Hunting skill - you can't catch animals without it!"

I'd leave this one out, too many new players would get knocked out by ants unless you also explain to them that they're supposed to lure the ants away. And even then it would still result in a lot of concussions because of the occasional sonic ant swarm.

I see it as exactly WHY you'd put it in. I know I've gotten knocked more than a few times by ants, especially when I didn't notice the faster ants in the swarm around the hive. To note, Will to Power (so one can fight and remove openings) should also be required in this. (Should also be its own quests, probably.)
