I like your thinking, that would be a great eye-rape.
My first choice was cherry, actually looks good, but is a piece of shit to gather. 1 log per tree and it gives like 8 blocks, i had a greathall that used it for roof, was rough to gather it even in a biome that had them.

I agree, but I'm not sure it's a good idea, performance-wise, to have variable-material support on these very common things unless I can instantiate the rendering of them over multiple materials, which I've thought about for a while, but is tricky to get working.
