Based on what I remember experiencing/hearing when I layed back in w7:
Death/Life: Everyone went full Life because grievous damage was useless (no KO protection)
Night/Day: nobody bothered with this?
Barbarism/Civilization: Full Civ could be useful for new characters (especially since hunting is so dominantly done with a sling, unaffected by debuffs to STR/CON) but they have to stack Peaceful first(?) Also being a barbarian makes you better miner, which can be useful but also a balance issue?
Nature/Industry: This is the big one. Basically game tells you there's farming and metal industry - then tells you to select one. Like others said, it was the biggest thing forcing alts. I remember there being like one crazy person who claimed to swap between the two once in a while (or was outright masochistic and played solo while having the slider in a neutral position?)
Martial/Peaceful: New player has to wait until maxing Peaceful before they can "properly play the game." No idea if the damage bonus was ever worth losing the LP gain bonus.
Tradition/Change: This is one of the few things that was (allegedly) an useful and active choice, also (allegedly) making for a more even playing field in terms of PvP:
