+1 Beef is kinda meh and beef specific food (Bulldog and Black Ribeye Steak) are not great too.

Cows should quickly become the main source for mid-to-high quality hides for leather.
Just like we grow trees to get the highest quality wood, and we domesticate crops to have better (and more!) ingredients for cooking, so should animals be the main source for generic-animal related stuff like bones and hides. Wild animals and hunting is still important for animal-specific items, and for finebones.
