actually the batter has egg in it. personally i think you should be able to make pan roasted meat with just a pan and MAYBE butter but most meat doesn't need it as there is enough fat already. fish could be poached in water, idk. i still think ovens should be usable for roasting meat and fish.

i also think schnitzel would be great, pound the meat on your anvil with a smithy hammer (lol) and cook it in batter
