Why even have a crafting menu at all? We should have to discover the recipes and then craft them with that knowledge gained.

I think an interface in which you place certain ingredients for testing and crafting would be better than looking through the crafting menu for your desired synthesis, with an option to craft in bulk once you have discovered the recipe for "apple pie" or "chicken salad" etc., of course.

This pretty much is the (crafting side of) skills, without wasting all those resources. Your character learns things and then is able to make them.

+1 for the OP, however if we got the sheep milk, what would we get by feeding clovers to mouflons?

it would probably depend on whether you right clicked it and selected shear or right clicked it with a bucket...

Why does that need to be changed? Make it to get wild milk you still need aurochs, wild mouflon still only give wool.

I don't get how sheep milk cheeses would add a ton of recipes. I presume we'd still use the same generic rennet, and the rest of cheese making doesn't involve any recipes. Cheese tubs could be the same as for cow milk, just disallow mixing and have it say which milk is in tub (if any) when you open the tub.

Also, I'm definitely in favour of sheep milk, since my sheep have milk like 40q better than my cows :(
