You need to sort crop seeds, which means you need to directly deal with them one way or another. I do like that straw lands on the ground, and would really appreciate if poppies did the same. If straw landed in inventory like the flowers, I'd have to yell about it in the bugs forum like a nutcase for how broken it would be.

Metal ore, on the other hand, does not have quality, but the more important factor there is time. With farming and a scythe, it goes quickly. Mining, though, does not benefit from the tiny 25 slot inventory (with merchant robe) you'll have with a flask and a bucket. 25 may be a perfect smelter load, but if you're walking from the mining spot to a smelter -- which is probably quite a long way -- then you are doing it wrong. Obviously, you'll walk to the chest after mining every 25, which I don't prefer and think is more work, but a toggle would really be the best solution here.

How is it more work to mousewheel the ore into a chest than to click each individual piece?

Lol, it's more work than single click on every stone inside the smelter.

Well, im not lazy, but when you have 20 smelters, it takes a lot of time.

No it's not. One click per stone. It's way more stressful to throw away all those seeds when you're full nature and mass farming something and don't care about quality, therefore don't need to sort seeds and just want to throw them away.
