Well, let`s see:
1)Even though mills idea isn`t new, it`s great.
2)Flour sacks are great aswell.
3)I`d kill for ability to store seeds at barrels. Even more, with barrels which mix ql of seeds replanting would become waaay easier.
So, to sum up - every point of this post is great. +1

+1. The mills should be difficult to build, and expensive, though. Back in the day, people used to travel long distances and pay fairly hefty sums to use a mill.

That's the way it should be.

OT: one of the mayors of my village (I think it was before the spanish civil war) was the owner of a mill, he took all the milling stones from the houses of the village and then paved the main road with those stones, so the villagers only could make flour in the mayor's mill.

+1. making millstones would also give more uses the stoneworking

I need to change my idea about the windmills a bit heres my new idea :
Windmills should have 3 floors 4th optional (cellar)

1th floor would have a big basin centered in the room , this would collect the flour or grist depending on what you were milling of course.

2nd floor would have the milling unit . You need to add 2 millstones after building the windmill by rightclicking on the milling unit with a millstone lifted , the more you mill the more the stones will get damaged so you'll need to put new stones into it if theyre broken (for making millstones youll need to learn stone making so a new future for stones (big stones)) .
also will there be a kind of lever to start / stop the milling proces it wont stop by itslef .
The milling would take a certain time .

3th floor would have also a big basin centered in the room for collecting the wheat or malted wheat in order to make wheat flour or grist you cant make both at the same time .
Befor you can mill / grind another kind of material youll need to empty the basin at the ground floor , and maybe the basin at the 3 th floor too if there was still some material left in it or mill it .

Both basins would have a capacity of 200 units
please post what u think of it
sorry for my bad english
