Jackard is right. Rats are a much more edible animal than toads. Even most animals won't eat toads. If hearthlings are already resorting to eating ants and larvae for survival, rats should surely be on the list of edible things.

If rats are made edible, it should make sense they're milkable too. It would give a pretty small quantity though.

Why, because you think milk from rats is crazy? Rat milk is very high in good cholesterol, and much better for you than cow milk.

Entomophagy is a classic food taboo in most indo-european cultures (along with, by and large, rats, dogs, toads, frogs (except those crazy french people)), so I debated the ants with myself for quite sometime. Gameplay trumps realism and, besides, in an emergency situation, of course you could, and would, eat them. Rats and toads should be edible as well.
