its not different but its used differently. theres another word, "gären", which is only used for yeast. beer for example "gärt" or fruits can "gären". while things like tobacco leaves or tea leaves are "fermentiert". its basically the same happening, but it sounds odd to say "the wine is fermenting" or someting liek that
