The relevant part is the quality/yield/hardiness breakdown. Basically, you could grow a hardy wheat anywhere, but it's going to have crap quality and yield (you sacrifice those for hardiness), which means that in certain regions it's going to be a lot more efficient to import wheat than to grow your own.

omg! that is the exact same idea (about the yield,hardiness,quality) i had days ago but was too afraid to post it coz i thought

One small suggestion for UI, rather then activating soil testing from the adventure menu right click the 'testing agent' onto the soil to do the test. Much less UI clutter this way.
