They are indeed very fast, and sometimes I don't even catch my wine when it turns to vinegar because storing it means making a bunch of cupboards and buckets which can be a real pain. Bucketing it until you get 100L seems like a great idea, only real problem I see (more of an annoyance) is no way to keep it in a barrel (only large container for holding things). :/

Although one cupboard can hold 16 buckets (160L) which is more than a barrel, it's more annoying to take it out and put it in (not to mention you can move the barrel where you want, moving the buckets a lot more annoying).
