Well, they were alive until you turned them into a corpse. Although it would be incredibly fucked up if you could decapitate people ,or chop them up while ko'd.

Cannibalism isn't healthy is it? I would expect some black FEP for mad cow disease

This seems faintly usable... perhaps characters with high "death" attributes are OK with eating people and gain the most, while those with high life refuse to eat human flesh, and neutrals refuse to eat unless they are varying levels of starving. Perhaps cannibalism actually decreases your life rating.

Then you have the victim- I'd say that it's best if the victim doesn't loose any points when reincarnating from being eaten. However, we can have Tradition decrease by one point, so that if you kill someone several times they will start to loose points even with full tradition to start.

Combine that with stat-based bonuses, and I think we get a good balance of preventing innocent players from loosing too much from cannibal attack, while also preventing Human Farming from being practical. Especially since the only people that would be targeted would be those that where already strong (in fact, if eating meat from people weaker than you gave you a penalty...)
