According to Wikipedia, smoked malt is an ingredient for making whiskey, particularly scotch. Others will now undoubtedly support smokehouses for this reason alone.

Smoking food also introduces potential carcinogens. Make of that what you will.

During summer I often smoke small fish like herring or mackerel myself on a regular campfire with a metal cylinder as "smoke-house" the whole process takes around an hour I guess (including lighting the fire). It would probably take a longer time with higher Volume/Surface ratio items like cheeses, sausages or meat.

I smoke pork every winter, and it takes a long time. You need to smoke it for a week, and then let it hang in the smokehouse to dry for at least another week.

On the topic of preservation it has been mentioned that decay might be extended to include items as well as objects (tea going cold, meat and milk spoiling etc), smoking would have added benefits if this does happen.

Uh. Smoked fish goes bad. Even refrigerated. If you let it sit in a zip-lock bag for like a week in the fridge it gets moldy.

And yeah smoking fish doesn't take long at all. Different woods make it taste different; most of the smoked fish I eat is done with applewood because it's delicious.
i guess they never miss huh

Making dry rock out of the stones, which could be used for many many different things including a particularly hard to perish item: Jerky.
I will steal all of the RuneStones in the land, if your stone has gone missing in the night then I'm already hauling it.

I wasn't particularly thinking of just smoking fish.
