Because without a cap on cows and no way to achieve quality on milk or appraise the quality of a curding tub, there is no market for milk. That said, I would remind people that there was a very short lived high demand for butter way back in the beginning of the map before we (Read: High end players with mines) developed Q40+ butter making.

There will soon be a high demand for HQ butter and possibly HQ milk but supply/demand will probably make it so people would rather use their milk than trade it.

as soon as things are rare, its makes even more sense to trade them for those who dont need them that much. cmpare it to silk right now: ive been trying to get my hands onto some silk for at least one week, now i payed someone a whole chest of wrought for it!
as things get more and more complex, ppl wont be able to produce everything themselves...
thats why milk in barrels is a very good idea. thanks.

Early game when cow spawns were sparse and metal was only newly discovered you could get a bar of cast iron for a chest full of butter.

That's when I first learned to hate milking cows ;)

Milk in barrels could make trading milk(when it is higher q) very easy. Now as for why we cant store it in barrels now and why wine doesnt turn to vinegar is magic and i say you should choose to make it into vinegar or into better wine not store it in buckets
