Needing maps for caves would be awesome, and a great way to support living in them.

+1 for mapping caves. It doesn't make sense, anyway, that you can't map them. If this feature isn't implemented, my next project might be a client that builds minimaps for caves.

Pretty hard, unless your client takes screenshots and knows how to compile them :X since i dont think there is even a server side map =X

No, it should be doable: Your client gets the ingame tiles, and everything on them. It's just that instead of displaying them ingame in an isometric view, you just display them 1 pixel per tile, top down.
Memorizing might be a larger problem, but there are some options for that as well.

Just an Atlas container item that can hold documents and maps, and the ability to NAME map items would make me happy.

Considering if I'm looking for a particular local map, having to view each one individually, waiting for all those old minimaps to load enough to recognize the map, then going to the next, has to waste bandwidth. With the item named you'll have an idea and so can just open the map you want to open.

I can see a lot of benefits in automatic updating, as a lot of my maps became blatantly obsolete when the minimap ground display was changed (thinner outlines). But I usually don't like things automated that much. Maybe something like you have to travel to that localmap, but you can update the entire localmap from one position somewhere in it? Maybe drag a dream onto a completed localmap and it will do an update action that takes some time; this way it will be easier to stay updated, but it will still require some manual travelling and work on the cartographer's behest.

But I think mainly, a way to store and label map items would be the most important improvements to Cartography.

My big wish to go with cartography is an item that can be combined with a map. Specifically a 'sextant' made from a couple pieces of glass and a couple bronze bars. You use this in conjunction with a map, it shows you where you are on that map. If you're not on the map you selected, it puts an arrow on the map indicating which direction the contents of that map lay.
