I think it would be better to avoid random dungeons with random loot. The game could change to yet another WoW clone, and we don’t want that to happen, yes?
About the monsters. If “mobs” are too much then maybe just one monster, that is in some kind “special”. A simple example would be “The werewolf”. You would need silver arrows and swords to kill the beast making it some sort of a quest to obtain such items. Maybe the werewolf could be a player character and would try to stop the "heros" from obtaining silver?
If even that is too much then what about a hungry/diseased but really big bear? You could build a cage and maybe get some “bait”?
What about that Ent-Dryad thingy? What if someone finds a way to catch and “taint” it? There is a “necromancers robe” out there, right?
About enchantments. I am aware that magic in H&H should be more subtle and sublime, but it still can be used as a defense mechanism IMO. You could use dreams to put player characters to sleep or to form illusions and scare them away?
