easy meals: rabbits, fish, foraged chantrelles and spindly taproots

It makes sense that they are hard to kill. The wild "cows" aren't really cows, they're aurochs, the wild predecessors of domesticated cows. They were taller than most men and weighed in the area of a ton. I wouldn't want to fight one.

Err get close to one and shove the sword into its neck.

Highly doubtfull but some animals are nice rarely.

Or get a bow and shoot them one shot... least in the old days thats how it worked...

Unless you're an experienced butcher, it's going to take more than one stab to bring down a cow. Hell, even a pig would still live long enough to gore you to death.

As for a single arrow, I don't think it's possible. Unless you get a really lucky shot through the ribs, it'll take hours for the animal to bleed to death.

See the skeleton in the background? Rhinoceros. Foreground? Aurochs. Similar sizes. I'd rather nuke the angry cow from orbit than stab it.
