If something special is needed, slaughtering calves should yield an edible brain.

And goldbeater's skin, of course. Also you should really need calf's intestine when making rennet.

In general, butchering should yield specific pieces of meat, not just nondescript generic.

That would be an excellent idea. Chickens could produce carcasses that would need quartering, cows would be cut up into ribs, fat for rendering, and so forth. Deer could provide high quality back-strap and poor game meat.

Yah, FEPs don't really succeed at making different foods feel different. Different cuts of various qualities and uses would kick arse.

This could be its own skill in itself (perhaps a subskill of Hunting) called Butchering, requiring a butchering table of some sort to extract everything. I'd imagine you need more than just a "sharp object" to extract everything useful from a 1000 lbs. cow.

Yes. The nomadic Indians of the the plains were known for their advanced butchery tools when they processed the buffalo. Not that more advanced tools wouldn't help speed it along, but you can get just about every cut of meat off of something with a piece of sharpened flint.
