the truth is that these kinds of damage have different effects based on your armor. Armor is designed to protect from slashing damage mostly. you can get some protection from piercing weapons like daggers, spears, and arrows, but blunt weapons like clubs and maces are deadly, even if you wear armor. For instance, that nice suit of high q plate will protect you from a sword, and from some stabs and arrows, but hit with a flanged mace, and it actually becomes hazardous to your health because it buckles and tears. Harder to move around in, the jagged edges will cut you up, and then there's the fact that blow more than likely broke one or more bones. But of courses, blunt weapons have a tendency to be slower and heavier than other weapons.
Slashing=average speed, average damage, not the best against chain mail and plate.
Piercing=high speed, low damage, good against chain, but a little worse against plate.
Bludgeoning=low speed, high damage, good regardless of armor.
I didn't included leather, because im not really sure what kinda of defenses it offers exactly.
These damage types could be added to animals easily as well (teeth & tusks=pierce, claws=slash, hooves=blunt)
