Well, there's a Love system in this game. If 1 bull "loves" a cow, he will have sex with her. You can't specify which cow will breed. There can also be a gay bull (really low chance - 1%), he will not breed.
It's completely random. You don't pick sexuality.

If a bull and cow are separated though, through a fence or something, they can't breed.
