Every single trailer is some generic pre rendered sequence that has nothing to do nor looks anything like the actual game, and the couple of demonstrations I've seen have been very clunky and focused mostly on explaining lore and myth text than showing the meat of the gameplay.
This is little different than any commercial game. Welcome to World of Advertising. You won't get in-game footage until nearly all the graphics are in place (at least no placeholder graphics, anyway) and they have enough things to put together said footage. Since Salem is a commercial game, should you really expect anything different?
As far as the earlier comment on "judging" something we haven't seen... well, we can judge what we have seen. So far what I've seen of witchcraft is very underwhelming. I know there's more to come. I (wrongly) was hoping for another session much like the first where there was a bit more to demonstrate. I would have much preferred them to hold off with it until later when there was a little more information, but I can't fault them for trying to do a little something for Halloween/Samhain/(whatever name you have for the date here).
Also, maybe you misread me, maybe I didn't communicate it well enough, my comments were directed at cobaltjones's post prior to that one about lore and such, not necessarily about any specific mechanics.
