A prop is simply a item which looks like a thing, but isn't actually one. For example, theater props. Wax fruits. Plywood trees. Papier maché items. Fake blunt swords. Glass and tinfoil crowns. In context, it means the pumpkin can not be interacted with or harvested yet. Its just part of the scenery, thus, its a prop pumpkin.

A piece of temporary art assets would be a 'placeholder'. Meaning that it will be replaced later with higher quality sprites or models.

He likely means that the pumpkins aren't implemented yet so that's just the art for them
