Generally, when the server goes down, all timed processes (steel, cheese, tanning, drying, etc) pause. So you don't have to worry about any of that.

Not exactly true. If the server comes back up and you can't get back on, your steel crucibles could very well go out. Everything else... well, it's at most annoying to not rotate it at EXACTLY that minute.

Maybe. Maybe loftar just forgot to feed the hamster. Maybe you're connection just blows. You're the only one complaining and unless there's a crash, nobody really worries about lag that much. It's just a fact of the game.
