All the new values are mainly related to crafting. Different crafting recepies will, simply, require different values for optimal results. In general, the quality of crafted items will be limited by the raw materials and tools used, and the skill values will only affect the quality downwards, if your values are lower than what the resulting item's quality would be otherwise. Sooner or later, we'll add to the crafting window so that it displays exactly which attributes affects the current recipe.
There are a few actions which also depend on the various attributes. Farming, for instance, will affect the quality of the seeds you harvest. Survival affects the quality of herbs picked. There may be some other effects that I don't currently remember. (Both Farming and Survival are used in several crafting recipes as well, though)

Certainly. Agility represents general light-footedness, while dexterity represents... well... dexterity. Some crafting recipes (especially sewing related ones) depends on dexterity apart from its skill value.

Currently, it only affects some of the more high-level recipes. It will probably gain other, more abstract qualities later.

Sewing includes leather, and Carpentry is used for many wooden items.
