build wine press, barrel
plant grapes -> harvest grapes -> press grapes -> juice into barrel -> replant grapes

build herb tables, kiln, cauldron, bucket
plant wheat, hops -> harvest wheat, hops -> replant wheat, hops -> store leftover hops, put leftover wheat on herb tables -> cook wheat in kiln -> boil wheat and hops in cauldron -> put wort in barrel

how is that easier

Don't really remember the exact numbers, but beer takes a lot less tiles of crops per barrel. Also, tankards hold more, which saves quite a bit of clicking when actually drinking the booze. And beer won't spoil if you forget about the barrels for a while.

Which is funny, because realistically it should be the exact other way around. :)

This post is going to get me killed. However, with this new update; I think you should make wine that sits in buckets spoil to vinegar. It would give us a reason to use the demijohn for more use other than decor.
