Got a couple gouda recipes. Creamy Camembert aged outside or in a basement yields Generic Gouda. Two slices for 5 constitution. Pretty uninteresting, as promised.
Edit: Cellar cheddar in a cellar is also gouda.

Mothzerella outside becomes gouda, as does Camembert in the mines (I'm pretty sure, unfortunately I haven't kept good notes...)

Also, according to another source, ementaller in cellar, cave cheddar in cellar, and camembert in the cabin all degenerate into not-so-delicious gouda as well.

Here's what I've compiled so far, from the info in this thread. I'm assuming cheese aged twice in the same place automatically turns into Gouda.

Mothzerella:
Inside -
Outside - Gouda?
Cellar - Harmesan
Mine - Gouda

Camambert:
Inside - Gouda
Outside - Gouda
Cellar - Gouda
Mine - Gouda?

Cellar Cheddar:
Inside -
Outside - Brodgar Blue Cheese
Cellar - Gouda
Mine - Cave Cheddar

Ementaller:
Inside - Gouda
Outside -
Cellar - Gouda
Mine -

Cave Cheddar:
Inside -
Outside -
Cellar - Gouda
Mine -

Well, incredibly conveniently, I seem to have placed everything in the holes in the chart. I also just shoved Camembert in the mine (again?) to double-check that. I think my House cheeses should be finished tomorrow, and one of my outside cheeses. The other one's gonna take a bit longer (slightly past halfway).

A few new gouda results. Mothzarella outside is gouda, and I can confirm that camembert in the mine is gouda. Camembert doesn't age into anything interesting at all.

Edit: And cave cheddar in a mine turns into gouda.

The... Heck? It looks like some of the cheeses have duplicate recipes. Mothzerella in the house produces Harmesan, and Cellar Cheddar in the house produces Brodgar Blue Cheese.

Yeah, I can confirm the Harmesan indoors.
Edit: Also, emmentaler and brodgar blue both become gouda outside.

Emmentaller outside is gouda and cave cheddar inside is gouda. I believe that fills out Stage 2.
