We had quite a bit of an outage today. Our server, still not upgraded, ran completely out of memory and stood still, swapping, for a couple of hours until we got it rebooted.

Have you considered running a VM on a higher powered server and constraining the resources available to the VM? That should allow you to achieve the performance profile results you were aiming at with your current server, but also give you a bit more stability and flexibility when the extra grunt is needed
