yes, if you hunt during the day you will find more animals than if you were to hunt at night.

I'm not aware of any proof (e.g., thus sayeth the devs), but it has certainly been my experience that there are noticeably more animals during the day than at night. In fact, it's so consistently true that I do on-foot exploration only during the night and dedicated hunting only during the day.
