Broccoli & Salmon bake

Image

Pasta - I use fusilli/penne
Large broccoli florets
Fresh skinless salmon fillets
Mature cheddar cheese, finely grated

For the sauce:

Butter
Plain flour
Milk
Mascarpone
Sundried tomatoes
A few large fresh basil leaves

To make:

Boil pasta, adding florets for last 4/5 mins
Put the butter, flour and milk in a large pan and heat, stirring continuously until it thickens to make the sauce.
Remove from the heat and stir in the mascarpone, sun-dried tomatoes and basil. - You can add other ingredients here if you like them such as anchovies, capers, etc. I usually add mushrooms and a bit of chopped onion.
Season and then add the pasta and broccoli.
Halve the salmon fillets widthways and place the pieces in a single layer on the base of an ovenproof dish. Spoon the broccoli mixture on top, then scatter with the grated cheddar.
Bake for 30 minutes until the mixture is just starting to bubble round the edges.

For afterwards:
