Combat is a bit complicated but I'll give you a quick break down: There is no luck involved just raw numbers.
You and your opponent have an attack bar (red) and a defense bar (blue). When you attack, such as with a punch, you use up all of your attack bar to try to break their defense bar. Lets say you have 10 Unarmed Combat and punch an opponent. If you have a full red bar (100%) then you will do 10 damage to their blue bar. If you have a half full red bar (50%) then you will only do 5 damage to their blue bar. If an attack breaks their blue bar, you deal damage instead of missing. For example, lets say your opponent has 5 Defense and you have 10 Unarmed Combat. You punch them and break their defense with 50% of your attack, so you deal 50% of your damage to their health.
If you're interested (don't worry if you're not) here's the formula for the damage you'd do in this instance: [0.75 * 50 * sqrt(Strength / 10)]/2
There are other numbers and junk but lets focus on your survival and growth rather than on combat.
Boars, Bears, and Deer will wreck you right now. There are ways for you to get around this, such as ranged combat, twitch hunting, or utilizing shallow water but once again we're getting ahead of ourselves. The key to growth isn't taking down big game, it's exploring. Walk around, look at stuff, and then walk around a whole bunch more. Get lost, find weird things, discover those weird things, and then skin and consume those weird things. Different terrain types offer different obstacles and rewards. For example, on grasslands, which are big open bright green grassy areas, you can find aurochsen and chickens. If you're brave and don't mind risking your life you can pluck hair from aurochs for a tasty curiosity. You can also just pick up chickens and rabbits without killing them, wring their necks, and carve up your prize.
