Art, or something that made the happiness meter useful. Perhaps a happy character works faster or something. Craft watercolours, fantastic pottery, statues, works of literature etc.

You might be onto something there... an entirely new item called decoration. Being around decorations increases the happiness meter. A happy hearthling has more energy and doesn't tire easily compared to his more depressed kin. Just one of the benefits the happiness meter can provide...

There's quite a difference between ships and boats. Try crossing the Pacific in a rowboat.

Hmm, I guess something like summoning, magic or riding :) Those are pretty much basic skills in some games and would be nice to have in haven and hearth :)
