1. You can obtain monopoly on whatever the fuck you want, if it's rare in YOUR area.
2. We had a tiny field to begin with, but some of our villagers went up north for a few days and got back loaded with seeds.

Monopoly is to have most and/or everything of a product, while surrounding areas have less of said product. When you have monopoly on a product, you're dominating the market and selling/trading the product to the rest of the area for a high price.
