My group has figured out all the mechanics.
On a x10 skillgain server, which seems to be the standard, you could get full basic gear (iron plate, 2h greatswords) in 6 hours with a group of 3. Longer on lower skill-gain servers, and with less players. For other people it seems to take several days of experimenting, even longer if they get sidetracked trying to make massive walls and fortifications.
That said, imho, you could PvP very successfully with only a pitchfork and chainmail (due to the nature of the wound system), which you could make in 1 hour flat solo, or quicker if you had a group of guys rushing it.
Playing beyond that will get you slightly better plate, more variety of weapons, and the ability to build real defenses.
Other people on our server aren't yet able to defend themselves against us, so we just demand payment for them and screw with them if they don't pay up.
We look forward to actual large fights.
We did have one... it was the largest group on a server. They had sworn "fealty", and were paying us a very small levy daily in alchemical ingredients.
But one evening, they called us over to help protect them, as they claimed they were being attacked by a mob of pitch-fork wielding villagers.
Turned out it was 6 of them in the aforementioned plate with 2h swords.
There were only 2 of us on our side, but we killed them all quite handily

Sadly they were so butthurt they all quit after.
