I have food and supplies to wait it out inside my house, but how long will it take for this stalker monstrosity to leave me be? It's a level 7 or 8 bear, I think. It's what I get for living in the middle of nowhere! It seriously just appeared from east of my little claim and just charged me as I was putting things in my kiln.

Get a bigger claim. "Monsters" as you call them don't spawn within your claim. You can also as you didn't specify surround yourself with at least the basic walls so bears, boars, and other things just don't walk on in. As Sarge suggested a simple logging off for a while will make the bear vanish.
