most of the map is q10 resources, e.g. clay, water, soil. there are some points of higher quality scattered around. these spots, aka nodes, will decrease in quality when you pull things from them, but they regenerate over time. so from a higher q spot, you can get much more clay. if it's not on a clay node, you get the clay the first time you dig and it depletes it to under q10 for an area. if the spot is under q10 you get no clay.
