There's really not a lot to plan ahead. You just need a house (Timber house, stone mansion if you can afford it), relative vicinity to your cows, and access to vinegar.

"Dang, are your wagons that slow?"

If I wanted to get a load of bull from you I'd have brought my cows for you to impregnate!

If you mean mansion layouts for optimal space or production area:

These are some of the better lay-outs, replacing the cupboards with cheese racks ofc.

Those guys have no clue what they are doing, this is the best and most effective design

This design is for brodgar blue cheese, and is enough to fill exactly 6 large chests, and its exactly 3 cupboards of trays, and 6 cuboards for curd. There is enough cupboards on the bottom floor, to house 6 cupboards of trays(2 batches) and 12 cupboards for curd. The design is flawless.

Early world exploit: Put your hearthfire inside a cave, then hold shift to position a claim right in front of a cave. After 8 hours the claim will be unbreakable. Since your hearthfire is inside the cave, you can still get back inside, and leave, but nobody will be able to enter, effectively making you unraidable for the first 3-7 days. Enjoy

Here's what I do:

Get 1 mansion with a cellar.
1 cupboard will hold 32 trays but since 32 will not fit nicely into the racks which hold 3, put 2 items into each cupboard to remove those spaces for an even 30
For every cupboard, make 10 racks.
You can fit 5 cupboards in a basement of a mansion and 50 racks
You can only fit 2-3 on the main and upstairs floors so put 2 cupboards on one of them, and 3 on the other, then place 50 more racks

Fill your cupboards with cheese trays and fill them with the curd you get every day
When the cupboards are full, put them all into the racks and fill them completely on the one floor
You'll now have a full rotation of cheese

This process is a lot quicker depending on how many tubs/milking cows you're using

If you arrange cow gates in two parallel rows and put a barrel next to each one, you can milk your cows without taking the bucket off the cursor. You can do a milking run very fast like this, which makes it easy to milk 3-4 times a day (when you get really high milk quantity). Just transfer barrels to the factory when they fill up.
