Probably be good. Although personally I think turning buffalo into sausage is a waste of time as that is some great steaks and even ground meat (a lot like beef but a little richer). Elk and venison can get a bit gamey (I do like a good young cow elk steak though), so the game meats are always great in a sausage. Also depends on what they cure it with and what sort of spice palette they use.

I did some nosing around for better deals, and Cabela's is probably a better choice if you're looking for game sausage. They seem to be offering some sales as well.
