There are certain long-term actions that generally are done while you're offline: Smelting steel, aging cheese, mating moths, growing crops, and dealing with cattle. There isn't anything you can do to speed these things up but for the most part the challenge with them is just waiting. After the initial input, such as finding a mating pair of moths or planting crops, there's no other input necessary until you're ready to gather from them.
Most actions require player input in short, regular intervals to continue such as mining, chopping trees, digging clay, smelting ore, or crafting items. For the most part there is very little that you can do while offline.
