How do I disable all default shortcut settings?

I often trigger the default shortcut functions during battles, which causes me to select some strange options, leading to serious mistakes.
I want to ask if there's a way to disable all the default settings at once?

I'm a Steam player and not very familiar with installing clients. If I install and set everything up, will it stop working when I return to playing on the Steam client?

I've long wanted this, even if just to disable the hotkey for hearthing (at least a couple of times in every world I accidentally hearth, usually while trying to type in chat, and always at a most inconvenient time), or change it to something I'm not likely to use accidentally.

I've tried a couple of the third party clients and found them either - TMI, so much data on screen that it distracted from the game (and often affected fps); or made things so easy i felt like I was cheating. And they often lag behind game updates, so I stick with the default.

Have you checked if the game’s keybind settings allow you to remove individual hotkeys?

Thank you for your recommendation. I tried out a client earlier. I thought that after uninstalling this client and installing another one, my reset keybind settings would remain, but they didn’t. Using this client caused me more inconvenience, so I’ve decided to go back to using Ender Client.

The developers might have preset hundreds of keybinds, and having to disable them one by one is too exhausting. I really wish they would just remove the default keybinds altogether. I wonder what they were thinking when they designed it this way...?
