Here's an idea, instead of making zones where winter doesn't exist (greenhouse, mound bed) why not actually add winter specific farming strategies?
forcing rhubarb to harvest a crop during the winter
sprouting plants indoors so they can be planted directly at stage 1 or 2 come spring, instead of 0.
covering hardier plants in leaves/wicker/straw/fabric/mulch so they can go dormant, and gain a bonus stage or two come spring.
let some plants be planted directly during winter, stalling out at stage 2 or so before spring.
maybe even add certain crops that can ONLY be harvested during winter, like say, plants that normally pull all their energy into their roots for winter. (carrots, parsnips, beats, all get sweeter in the winter due to this, add a winter-sweet version with extra feps or energy or all of the above.)
like for real, there's this whole world of winter farming that just doesn't exist in the game, as though every living thing is just supposed to be thanos-snapped as soon as it sees snow, that's not how it works.
just give farmers something to DO in the winter, it doesn't even need to be something harvest related, just so long as it skips the first few stages come spring, and stuff that was planted in late autumn be actually useful.
like for real, yall are acting like the only options are either keeping winter or removing winter, instead of just actually improving it.
