You don't hit and do damage until you've depleted the enemies defense, the blue bar, to empty. After that you start doing damage. The amount of your UAC that you apply to your attack is based on how full your red bar is. Swinging with a full red bar means that you have all 29 points of UAC behind your punch.

The idea is to keep swinging until you break the Blue bar and then start hitting the deer. Its blue bar will regenerate over time so the faster you can deal the damage the better.

you dont "miss" you just take a chunk of its defense bar (the blue bar on the right)

once its defense is 0 youll do damage to it as a percent of your attack.

there is no missing its impossible to flat out miss

Sometime the combat plain out bug. Especially if the deer is on fleeing mode, blocked, but still face you, then your punch will take his defense down but never take any hp for some strange reason. If it happen, just go away to fully desagro and take an other deer from the pack. I'm not sure that's what happen to you, but it sure do happen to me rarely, i kill animals on daily basis, killed tons and its obvious when the combat bug.

Also i'm pretty sure i never had this problem back in w4 when i had a toon good enough to kill animal at contact fight.
