I mean, if I mine a tile in cave and nearby tiles turn into brown color, and I mine one and get a feldspar - does it mean there is only feldspar, or is there a chance that any of the uncovered tiles is ore, even though it looks the same?
All cave walls initially look the same.
After mining the cave wall until it collapses all walls near it will be revealed, making them change colour.
This colour represents what stone or ore the wall has.

You'll have to figure out which ones give stone and which give ore.

That's not what I asked about. I know you have to mine cave wall to make other tiles change color. The question was whether the ores have different texture than other stone tiles.

Every single type of stone/ore has a different texture. Unless you specifically know what type of stone/ore a wall is, colour and texture are of no indication at all. You have to mine it and find out for yourself.

Does anyone know if the surface boulders indicate ore veins below? (we have none in our part of the world, wondering if it is very metal poor..)

They do not.
