I always hunt from my boat. Cows and sheeps are weasy prey, boar I jump to land where is starting to run away.

I have yet to run into one other person, though I've found many villages. But there sure are a lot of signposts.

The server only removed signposts on the parts of the map that were actually loaded during that run, so it might just be that the parts you're looking at weren't ever loaded that time.

Next time sign posts need to be destroyed I recommend having a massive army of rampaging bears do it. It'd be fun to watch.

That was also before you could tame animals.
Kind of like auroches now but, I don't think cows aggro'd in packs back then.
