Cheese maturation times

I'm trying to optimize our cheese production a bit, and I was wondering if anyone knew the approximate lengths of time it takes for cheeses to ripen?

eg. curds -> cellar cheddar, x hrs

I'm most interested in the bbc->jorb and jorb->mbc stages: they seem very long :p

What is known is on the wiki. Curds are about 40 minutes each to produce as long as your curding tub is filled with rennet and milk. http://ringofbrodgar.com/wiki/Cheese

alright :), I don't really know about editing a wiki, but I will post my findings here.

I just put 42 trays of jorb in the cellar at 4pm GMT today. I'll let you know when they are done :)

Next time I start other stages I'll record the time and try and post here as well. Seems like the jorb->mbc stage takes a very long time however.

Yeah, some of the cheeses take in excess of 120 hrs to make. I never bothered with times as I just moved trays as I spotted them. For those that are trying to maximize production (by having two or three plus) or bot it, having accurate times decreases the time to produce.

FYI, everything I know about editing a wiki I've learned while trying to update or fix RoB. :)

If possible next batch you do, the day after you put the cheese in (at around the same time, a 30 minute or so difference shouldn't matter), check the percent complete on the cheese. If it's at 12%, you're correct.

(Just for a little bit of confirmation before putting up numbers on the wiki)
