Has absolutely nothing to do with it. The only thing that will slow growth is being on non-native terrain.

Well, why do some trees stop growing and stay in second-to-last phase for many days / weeks? They all grow normally till this phase, but then some of them "freeze" for days.

In Sevenless' guide (viewtopic.php?f=2&t=19114)
you can read:

If a tree matures a stage and there's an object there, it may be stunted in growth (preventing it from reaching full growth and full quality as a result). This, oddly enough, includes players.

because last stage comes as "a decay hit" at random. Murphy's law.

IF someone wants to log in and camp a character right next to a tree long enough for it to grow from planting to stage X to confirm having a person there stunts growth, they can. I suppose you could put something like a boulder, plow, or chest next to a tree to attempt the same thing. I imagine having an item in it's new hit box would prevent it from growing any more because certain stuck items or characters may occur. As a note, I have seen trees grow with logs laying in the same square, so you'll have to do quite a bit of testing to show me that movable items or characters stunt growth.

However, this isn't quite the same as planting your trees too close together or near major constructions as I mentioned before. In those cases, the tree will actually lose stages and won't grow past it, even if you move the blocking object.

Bigger than just it's hitbox, and confirmed long time ago.

It may permanently stop it, I don't believe you can 'slow' it, it will just grow or not grow.

I've never had one stop growing from walking over it. If that was the case, it may not grow at all because you plant it on the exact coordinates you stand on.

small update:
Trees were planted at sunday evening (70-76h ago from now).
All elms, mulberries and willows are at the second-to-last phase.
Seems they grow at the same pace and need around 3 days to reach this phase. UNLESS server was down in the last 3 days, in this case just substract downtime.

im not quite sure what you are trying to prove here, but elm, mulberry and willow are all native to broad leaf terrain, and all 1-2 log trees. there should not be any difference in growing time unless you have put a hitbox to stop one of them to grow.
