Sadly enough, you can't. This needs to be changed by the devs. Porting with tamed animals and transporting them on boats are much needed features.

Which is better, small pens or large pens and is it better to (in the case of large pens) pen them in by species or will one big pen work?

It's all just personal preference. I like individual pens for cows, to better keep track of which ones have been milked. I put all sheep in one common pen, since I don't really harvest all that much wool. All pens are as small as possible, so I don't waste space.

Any grass CAN do it. A bigger grass area == greater chance of spawns.

Our village plowed a massive area near town and turned our culled seeds into grass... It can get 2-3 animal spawns a day, and actually spawns grassland forage like inkweeds!

How big is it you think? A quarter of a minimap or something? OR is it smaller?
