If memory serves correctly, calves need 5L per day, and cows replenish milk fast enough that this isn't really an issue unless milk quantity is below 10.

edit: also, calves (and other baby animals) will drink from a milk barrel if one is nearby, but I don't recall the details.

How much Con would be needed to safely forage a flotsam from a river while swimming?

I'd highly not recommend using swimming at all for something minor such as foraging as things can go wrong and you will lose a lot more if something does go wrong (disconnection for example). In summary, use a boat.

How do animals behave when they're fighting more than one person at a time? Do they randomly attack all of them, or do they wait until the one they're attacking is KO before moving on to the next one?

"Dang, are your wagons that slow?"

If I wanted to get a load of bull from you I'd have brought my cows for you to impregnate!

they attack person with lowest UA(usually) and KO that person first.

losing all your stam(usually happens when mining) means you're too tired to move and can only stand there and wait(or drink water)

They just can't move. If 0 stamina, that is. I think it can only be done through mining... Maybe destroying?
Edit: Woops, ninja'd. Guess 2 noobs answered your questions :S
