I'm thinking that as I start making a BW, I will need more kilns. Should I invest in more ovens too? And how about things like herb tables, the metal-refining structures, etc? Sorry if it's an odd or oddly-worded question.

I ask because I am just about to finish the (second, just inside the planned BW) palisade delineating my territory and it leaves me with a decent amount of space that's going to be empty otherwise.

it really depends on what path you will take from personal experience 2-6 kilns, 2-4 ore smelters, 1-3 finery forges(you should only 1 but if your a big miner youll want more for ease), 12+ steel crucibles, 6-12 ovens
that usually does it for me

You can make shit kilns out where you dig your bricks. 1 kiln in base is enough for making higher q bricks/bone ash/pottery.

Smelters and finery forge should be underground where you mine. You can claim/palisade (brick if you're a determined hermit) it cheaply enough. And hauling wood/coal down there is about as much work as hauling ore up. Crucis I do agree with, they're a pain and running 1 is about as hard as running 10, but it should most definitely be underground. Ovens you'll want to scale with your crops, but again they're easier to do in batches. 6 ovens would probably be fine for a hermit, my village of 12 runs off 12 ovens and we're not unhappy with it.

The point of these modifications: Trying to make you look poor. I'd even go so far as to say don't leave metal related chests outside at any time. As a hermit, you can't defend yourself, you can only hope not to be targetted. Brickwall is ultimately a necessity, but looking poor helps a lot too.

So basically: keep my kiln in base for decent stuff, make some kilns near my clay node (just outside my front door actually) for BW (while on the topic... what is 'wallgrade' metal and bricks?!), a few ovens in base to match my farming production, and anything metal-related underground in my mine. Is that right? Should I keep silk-related stuff (once I get that industry going) in a cellar out of sight too?

Yes, if it has already been started, you can finish building it.

Silk stuff isn't obvious other than a mulberry tree. wearing a merch robe will make you a target though.

wallgrade means any q because walls don't care about quality of inputs.

I'm out taming some auroch with a villagemate and the one I'm taming was accidentally hit with a dash by him after I had it at 40 tameness. The combat was cancelled and it is still leashed and following me around. Is it fine or do I have to restart taming? Hoping to get an answer before I wait 30ish mins to find out :)

You took damage from the animal? I've only heard of leaving the area and you damaging the animal causing taming to reset.

No, I screwed my fencing up and after it hit 40 tameness it ran out after him as soon as I quelled, where he accidentally dashed it. I fenced it back in quickly and we got it under control. It is still leashed/following me around. I'm beginning to think the taming has cancelled, he is about to hit 80 and I'm still at 40. Gonna give it another 10mins just in case.

UPDATE: been almost 50mins, just gave up. I figured it might have been fine with it still being leashed, oh well.

Dash is fine and can be used for taming. It's only dealing sp damage to the animal that will be a problem. in fact if you can tank a boar dash is recommended.

Another taming question

After I hit 20 tameness, is it fine to lead it through the gate into my village and continue taming it there? I don't see why it would be a problem, but I know wild animals don't really use open gates so I want to be sure.

They will most definitely walk through open gates if they're aggro on you for any reason. Just hunt a bear across your palisade and watch what happens when you open the gate on its next attempt to move.
