The 56 real time hour's...how do I know how long the server has been down so I can compensate for it in my fuel running out at the end of the process?

Time stops while the server is down. Also, moving to How Do I.

He's asking if there is any way to know how long the server has been down for.

I don't know of a good way short of seeing the crash yourself, or asking someone.

Thanks Dusk, that's what I ment, the best way would be to have a more accurate tick counter to look at (if you ask me). One of my fellow player's also suggested setting out the needed coal for the whole 56 hour time frame, witch is likely the best way for now.
Being as I've already been making steel for a while now, I know how to do it, I just want a better way of keeping track of it's progress.

edit- maybe a percentage representing how full the crucible is.
